Filotea linguine have a great capacity to retain sauces. Enriched with garlic and parsley, they are suitable for fish, shellfish and mollusc sauces, but they express all their goodness even simply seasoned with a drizzle of extra virgin olive oil and a sprinkling of Parmigiano Reggiano. Bronze-drawn and dried slowly at low temperatures for at least 24 hours, the pasta is highly digestible and very rough.
