Cetara anchovy sauce is an amber liquid obtained from the maturation of anchovies in salt, according to an ancient process that respects simple but rigorous rules. It is a transparent liquid sauce of amber color, dark and bright. Savoury but balanced, it gives the palate a sense of warmth that enhances the dish. The aroma given to the colatura by the salted and matured anchovies gives the dishes a notable note of flavour, considered by gourmets to be the fifth essence of taste.
